Think of your demo mix as a sketch, where you can get a feel of the artist’s style, and a Mix & Master as the final painting, with all colours and dimensions of the soundscape tempered, and the overall track adjusted so that the levels and loudness are consistent across all listening platforms.

Mixing blends individual tracks together to ensure they sound as good as possible. This often involves adding effects like reverb and delay to 'sauce' up the track.

Whilst mixing involves individual stems, mastering deals with a mix once everything has been combined into one stereo file.  Mastering aims to polish the track as a whole, giving it a final competitive sheen.
